Most pork at a conventional grocery counter comes from hogs raised indoors from birth to slaughter on grain rations formulated for the fastest possible weight gain, with soy meal as the default protein source. Pasture access during the growing season changes how the animal moves, eats, and puts on fat -- and a no-soy feed program is a deliberate, harder-to-source choice most large-scale operations don't make because soy is the cheapest protein input available. Put the chops in a hot skillet for a quick sear, slow-roast the shoulder for pulled pork, or roast the loin whole for a Sunday dinner.
